Cast Iron Veggie Frittata

  • Ingredients:
    • Eggs,
    • bell peppers,
    • spinach,
    • cherry tomatoes,
    • onions,
    • garlic,
    • cheese,
    • salt,
    • pepper,
    • olive oil
  • Instructions:
    1. Preheat your oven to 375°F (190°C).
    2. In your cast iron skillet, sauté chopped onions, garlic, and bell peppers in olive oil until softened.
    3. Add spinach and cherry tomatoes, cooking until spinach is wilted.
    4. Beat eggs with salt and pepper, then pour over the veggies.
    5. Sprinkle with cheese and transfer the skillet to the oven.
    6. Bake for 20-25 minutes until the frittata is set and golden brown.
