Cast Iron Veggie Frittata
- Ingredients:
- Eggs,
- bell peppers,
- spinach,
- cherry tomatoes,
- onions,
- garlic,
- cheese,
- salt,
- pepper,
- olive oil
- Instructions:
- Preheat your oven to 375°F (190°C).
- In your cast iron skillet, sauté chopped onions, garlic, and bell peppers in olive oil until softened.
- Add spinach and cherry tomatoes, cooking until spinach is wilted.
- Beat eggs with salt and pepper, then pour over the veggies.
- Sprinkle with cheese and transfer the skillet to the oven.
- Bake for 20-25 minutes until the frittata is set and golden brown.
